Crisp Oven Roasted Pork Belly

INGREDIENTS
1 pound skinless pork belly
2 teaspoons fine salt
2 teaspoons sugar
A few grinds of black pepper

INSTRUCTIONS
Season pork belly with 2t salt + sugar and a few grinds of black pepper.
Cover and refrigerate for 8hrs / overnight .
Roast pork belly for 30 minutes in a heavy, oven-safe pan or skillet, fat side up at 450.
Reduce heat to 275°F and roast for an hour or more, keep an eye on it cooking times may very.
We slice and serve over rice or ramen. May be chilled and sliced in a day or two.
