Cast Iron Pork Chops

INGREDIENTS
2 Thick Cut Mangalitsa Pork chops
Salt and Pepper
2 Tablespoons Vegetable Oil
Optional Butter + Fresh Thyme

INSTRUCTIONS
Preheat oven to 450 degrees F. 

Season front, back, and sides of pork chops generously with salt and a bit of pepper 30-60 mins before cooking
Brush pork chops with oil just before cooking
Preheat cast iron pan over medium high heat for 5 minutes.
Sear pork chops 1 to 1½ minutes on each side. 
Remove from stovetop and bake for 4-6 minutes. 
Let rest for 5 minutes before serving.

Butter Basting: Once brown crust starts to develop on both sides, drop butter and a sprig or two of fresh thyme into the pan to.
Tilt pan slightly so that butter collects by handle, using a spoon to pick up butter pour it over chops, aiming at light spots.
